Veg Kolhapuri





Veg Kolhapuri
















Ingredients

  1. 1 teaspoon for Kolhapuri Masala: coriander seeds
  2. 1/2 teaspoon cumin seeds
  3. 1 strands mace
  4. 1 inch cinnamon
  5. 2 cloves
  6. 1 pinch grated nutmeg
  7. 1 small stone flower (dagad phool)
  8. 1 green cardamom
  9. 1 black cardamom
  10. 3 Kashmir red chilies
  11. 4-5 whole black pepper
  12. 1 bay leaf
  13. 1/2 teaspoon poppy seeds
  14. 1 teaspoon white sesame seeds
  15. 2 tablespoon desiccated coconut
  16. 4-5 fenugreek seeds
  17. for Making Veg Kolhapuri: 1 large onion nicely chopped
  18. 3/4 tsp ginger paste
  19. 3/4 tsp garlic paste
  20. 2 tomato chopped
  21. 1/2 teaspoon red chili powder
  22. 1/4 teaspoon turmeric powder
  23. 1 pinch asafoetida
  24. 1/3 cup chopped cauliflower florets
  25. 1/3 cup carrot sticks
  26. 1/3 cup green peas
  27. 1 medium size potato cut sticks
  28. 1/4 cup french beans
  29. 2-3 baby corn
  30. 1 tablespoon chopped coriander leaves
  31. to taste Salt
  32. 2 tbsp oil
  33. as needed water
  34. 2 tbsp coriander leaves for garnishing

Steps

  1. 1.Heat a pan and on a low flame dry roast the spices cinnamon, cloves, black peppers, coriander, cumin, stone flower, pinch of nutmeg powder,bay leaf,red chilies, green cardamoms and black cardamom seeds

     
      2.Once the spices become fragrant, then add poppy seeds, sesame seeds and desiccated coconut.

      3.Stir continuously and dry roast till the desiccated coconut gets golden keep aside to cool

      4.Once the spice mixture cools, then take them in a mixer jar and make fine powder of this

      5.Now peel and cut the veggies in thick strips batons or optional size

      6.Prepare a steamer and place them and steamed not too over cook other break the pieces

      7.Heat oil in a pan and add chopped onions. Saute the onions till they are light golden

      8.Now add ginger and garlic paste and stir till the raw aroma of the ginger and garlic goes away.

      9.Now add chopped tomatoes and saute the tomatoes till soften and seems oil on vessels sides.

      10.Add turmeric powder, red chili powder and asafoetida and stir

      11.Add chopped bell pepper and baby corn and stir till it half cook on a low flame.

      12.Now add the ground Kolhapuri masala powder,stir and saute for few seconds.Then add salt and water and left to simmer

      13.When oil seen on top then add the steamed veggies.

      14.Stir and simmer veg Kolhapuri gravy for about 2 minutes.

      15.Finally add chopped coriander leaves. Now Veg Kolhapuri is ready to serve

      16.Garnish with fresh coriander leaves,onion rings and some chopped  red chills

  16.  Serve veg Kolhapuri hot for more taste with parathas,puri,chapatis or phulkas.
